If you’re wondering why Nathan and I didn’t post anything last week (I’m sure you were crushed) it’s because we were on vacation in Jamaica! We are about the most relaxed vacationers on the planet which means we do nothing but read on the beach, hang out at the pool, watch the random peacocks roaming around (don’t ask us why a resort in Jamaica had peacocks), and try a variety of fun tropical cocktails. Well, I try the cocktails…Nathan sticks to drinking the only beer that is available at the resorts in Jamaica…Red Stripe! I keep trying different cocktails because I can never seem to find one that I really like. They are all too sweet, too icy/watery, too strong or some combination thereof. What can I say…I’m picky! So, Nathan and I decided that when we returned home we would make better frozen Pina Coladas right here in DC. This perfect balance of pineapple, coconut, and rum flavors brings a taste of the tropics home and makes the end of an awesome vacation a bit easier to bear.

Jamaica

Frozen Pina Coladas

Serves 2

Ingredients:

1 cup chopped pineapple
1 cup ice
3 ounces coconut milk, frozen
1.5 ounces coconut cream, frozen (the coconut cream won’t freeze all the way but you want it to be as cold as possible)
3 ounces light/white rum (We used Appleton White rum in honor of our trip to Jamaica!)

Directions:

1. Put all ingredient in the container of a blender and blend until smooth.

2. Enjoy!
