Peachy Pancakes

Nathan and I are not what you would call ‘morning people’ and we don’t speak to each other in complete sentences until after a shower and a strong cup of coffee. Therefore, in true Nathan-Katryn fashion we will let the pictures in this post speak for themselves.

I do, however, have to add a brief note to humbly concede that Nathan was right (again).  He had the idea to add pureed peach to pancake batter and I was sure that adding the peach would make the pancakes heavy and dense. I was wrong! The pancakes were light and fluffy and a subtle peach essence came through…a perfect late-summer brunch. For the best results use ripe and flavorful peaches (i.e. learn from our mistake and do not buy hard peaches to use the next morning! Oops.)

Peachy Mimosas:
For 2 mimosas

Sparkling wine or champagne (we used Champagne Pehu Simonet Brut.)

1 Pureed Peach, to taste

Divide pureed peach between two glasses and fill to the top with champagne or sparkling wine.

This was a good mimosa but it would have been better if we had used better peaches. Sweeter peaches would have more successfully balanced the dry champagne. This drink has a pulpy consistency…more like a smoothie than a mimosa!  If you really wanna go crazy you can also puree a kiwi and that in as well.  (see top photo)

Nathan’s Beer Pairing
Southern Tier, Imperial Mokah Stout

I got this beer for breakfast because I have really liked most of the other beers that I have tried from Southern Tier.  However, I wasn’t much of a fan of this one.  If you can imagine what throwing a couple of coffee beans plus a few pieces of chocolate in your mouth and then chewing, then you know what this beer tastes like.  Maybe if you like super strong flavors like that then you would really enjoy this beer but it was too much for my poor taste buds.  To be fair, the label tried to warn me that it had super strong flavors but far be it from me to be the first man in history to heed a warning sign… Oh yeah, I forgot to mention that it has an alcohol content of 12 percent, making it stronger than the mimosas we made.

Peachy Pancakes:

1 cup all-purpose flour
1 tsp. dark brown sugar
1/2 tsp. salt
3/4 tsp. baking powder
1/2 tsp. baking soda

1 egg, beaten until light
1 tbs. butter
1 cup buttermilk
1/2 cup peach, pureed in a blender until smooth

Combine dry ingredients and set aside. Beat egg and add butter, buttermilk, and pureed peach. Pour wet ingredients into dry ingredients and combine with a few swift strokes.

      This probably won’t be too helpful but if I remember correctly we bought it from a local wine and beer store called Wine Gourmet in Roanoke, Virginia. Maybe you could contact them and they could ship some to you?
