Nathan and I traveled to Chicago last week for both work and play. We wanted to eat at some of the popular restaurants but seeing as we were trying to make reservations for the same day and many of the restaurants only had reservations a month out (!?) we had to do something else. The last time we were in Chicago we ate at a Mexican restaurant called Cantina Laredo. We loved the food, the design of the restaurant, and especially the mixed drinks. Most Mexican restaurants give you watered down, overly sweet margaritas and mojitos but this place does them right! So, out of options and being creatures of habit, we decided to head back to Cantina Laredo for happy hour and dinner yet again. This time we noticed a drink on the menu called the Ginger Paloma and wanted to give it a shot for the blog. For this post we left out the ginger and made a more traditional paloma with grapefruit juice, lime juice, seltzer, simple syrup, and blanco tequila. For a quick and easy paloma you can also use Fresca or other grapefruit soda instead of the grapefruit and seltzer.
2 Shots (3 ounces) Blanco Tequila
1 Shot (1.5 ounces) Fresh Squeezed Grapefruit Juice
1/2 Shot Lime Juice
1/2 Shot Simple Syrup
Dash of Seltzer water
1. Add all ingredients except seltzer in a drink mixer and shake with ice.
2. Pour into glass with ice and add a dash of seltzer water.
