We’ve all heard the quote “When life gives you lemons, make lemonade.” Well, we say, “When life gives lemons, make a cocktail out of it!” (I know, that was bad…) Anyways, We wanted to make a cocktail with our homemade limoncello and Nathan heard about this drink through word of mouth.  He was intrigued enough by the sound of it to experiment with the proportions and develop this recipe. I’m glad he took a chance on it because this drink is a winner and makes limoncello much more approachable to people who find the undiluted liqueur too sweet, too strong, or too lemony. The recipe takes a sweet and iconic after dinner liqueur and transforms it into a light and effervescent aperitif with herbal undertones and a citrusy tang. Straight limoncello is somewhat one dimensional in flavor…100% lemon (duh.) but this cocktail adds a savory and sweet element with the rosemary simple syrup while the prosecco cuts through the richness and sweetness and introduces a dry, bubbly contrast. You can sip, relax, and enjoy…preferably in this gorgeous late spring weather that has finally graced the DC area.

Rosemary Limoncello Cocktail

Ingredients:

For the cocktail:

1 shot (1.5 ounces) Limoncello
1 shot (1.5 ounces) Rosemary Infused Simple Syrup
3 shots (4.5 ounces) Prosecco sparkling wine

For rosemary infused simple syrup:

1/4 cup water
1/4 cup sugar
1 sprig fresh rosemary

Directions:

For the cockatil:

1. Pour Limoncello, simple syrup, and champagne into a glass with ice and stir to combine.

2. Enjoy!

For Rosemary infused simple syrup:

1. Combine 1/4″ sugar with 1/4 water into a small pot and place rosemary sprig into the liquid.

2. Heat until boiling and sugar has dissolved.

3. Turn off the heat and allow to rest for 5 to 10 minutes.
