Mulled Wine

Nathan and I are both optimists by nature but let’s face it…January can be dreary! The holidays are over, the weather is cold (except for the fluke 68 degree day we had last week!), and the days are short. Instead of letting this time of year get you down, fight it with cozy things…comforting meals, warm blankets, kittens, and hot drinks. Wait, scratch the kittens…Nathan is allergic. Let’s just focus on the hot drink. and our recipe for hot mulled wine. It’s the perfect January potable that will warm you from the inside out with flavors of citrus, spice, and apple. Don’t use a quality wine for this…you’ll be amping up the flavor with your own additions. Experiment with the recipe to suit your taste…this mulled wine is hard to mess up but easy to enjoy on a frosty January night.

Most recipes will tell you to use one or two bottles of wine for their recipes but Nathan and I wanted to make a little bit less for just the two of us.  This is a perfect situation for some quality boxed wine so that you can use only as much wine as you want or need.

Mulled Wine:

Serves 2-4…depending on how cold you are!

16 oz. (2 cups) inexpensive fruity red wine (we used Pinot Noir…from a box!)
½ orange, peeled
½ lemon, peeled
orange and lemon zest, to taste
1 cinnamon stick
8 allspice cloves, whole
8 whole cloves
1 Tbs. honey
1 bay leaf
1.5 oz Apple

Combine all ingredients except for apple liqueur in a small saucepan. Simmer over medium-low heat for 10-20 minutes. Remove from heat and add apple liqueur. Pour into glasses and enjoy!

Quality boxed wine. Is that an oxymoron?
