It is so annoying to be married to someone who is always right… it means I am usually the one who is wrong AND I lose a lot of bets.
At the same time, there are several perks to my unfortunate situation. I like to think that being married to someone who’s always right makes me right by proxy, right? The following drink recipe is another example of reaping the benefits of Nathan’s rightness…
While we were pondering what kind of drink to make with our sushi Nathan thought that using some of the ginger for the sushi with creamsicle flavor would be tasty. I definitely had my doubts but let’s just say he was right – oh so deliciously right.
Before attempting to make this drink we had had NO success making frozen drinks; they always turned out too thin and watery. We found that the secret is freezing as many of the drink ingredients as possible…in this case we froze the orange juice and cream and chilled the syrup and rum beforehand.
Katryn-San’s Ginger Coconut Frozen Samurai:
1 Cup ginger-mint syrup
1 cup Malibu Rum
6 frozen cubes of orange juice
4 frozen cubes of cream
3-4 frozen ice cubes
several slices of pickled ginger (optional)
Add syrup and remaining ingredients to blender and blend until smooth. Pour into glasses and garnish with ginger.
1 cup water
1 cup sugar
1 4-inch chunk peeled and cubed fresh ginger
2 large sprigs of mint
Bring water to a low simmer add sugar and stir until it dissolves.
Add ginger and mint and allow to steep on low heat for 30 minutes. Chill in fridge until ready to use and then strain.
